Homemade Granola
This recipe comes by way of my pal, Jay Finnegan, a Renaissance man if ever there was one! I've tweaked the ingredients a bit, so there's less sugar and more nuts.
Preheat oven to 350 degrees and into a large bowl, combine:
3 cups of old fashioned oats
3 cups of any combination of nuts and seeds, chopped or sliced (almonds, pecans, walnuts, pumpkin seeds, any combo except peanuts, as these tend to burn)
1 tsp. of kosher salt
1 tsp. of cinnamon
Add:
1/2 cup of avocado oil (or canola)
1/2 cup of honey
1 tsp. of vanilla extract
Mix well and spread onto a large rimmed baking sheet
Bake in the oven for 12-15 minutes, then turn the mixture, and put it back into the oven for another 12-15 minutes, until golden brown, be careful not to let it get too dark
Pour the hot granola back into your bowl, and add 1 cup of chopped dried fruit (I like dried cranberries, golden raisins, apricots and/or dried cherries)
Stir the granola every 5-10 minutes so that it doesn't clump together, until cooled, then transfer into a jar and store in the refrigerator. Enjoy!
